  • Coriander leaves (malli thalai)

Step-by-Step Cooking Process

Step 1: Preparing the Spice Mix

  1. Grind the turmeric, red chillies, and ginger-garlic into a fine paste.
  2. Add black pepper powder and crystal salt (rock salt) to the paste.
  3. Mix all the ingredients well to create a thick, flavourful marinade.

Step 2: Marinating the Whole Goat

  1. Take the cleaned whole goat and coat it generously with the prepared spice paste.
  2. Massage the marinade well into the goat’s skin and inside the cavity to ensure deep flavour penetration.

Step 3: Preparing the Biryani Base

  1. Heat coconut oil and ghee in a large cooking pot.
  2. Add cinnamon, cloves, and cardamom, letting them release their aroma.
  3. Stir in the chopped onions, followed by green chillies.
  4. Add the ground red chilli paste, allowing it to cook for a few minutes.
  5. Mix in chopped coriander leaves and mint leaves for added freshness.
  6. Stir in the ginger-garlic paste and sauté well.
  7. Add chopped tomatoes and cook until soft and blended.
  8. Pour in water and add salt to taste.

Step 4: Cooking the Goat Stuffed Biryani

  1. Add rice to the prepared biryani masala and cook until it’s halfway done.
  2. Stuff the partially cooked rice inside the whole goat, ensuring it fills the cavity.
  3. Tie the goat securely using a thread to keep the stuffing intact.
