- 3 tbsp oil
- 1 small cinnamon stick
- 2 cardamoms
- 2 cloves
- ½ tsp cumin seeds
- 2 onions (finely chopped)
- 1 tbsp ginger-garlic paste
- 3 green chillies (slit)
- ½ tsp turmeric powder
- 1 tsp garam masala
- 1 tsp coriander powder
- 2 tbsp chilli powder
- Water (as needed)
- 1 tomato (finely chopped)
- ½ cup coconut paste (optional, for a thicker consistency)
- Coriander leaves (for garnish)
Step-by-Step Cooking Process
Step 1: Boiling & Roasting the Eggs
- Boil the eggs and make light cuts on them to help absorb the flavors.
- Heat oil in a pan and add turmeric powder, chilli powder, black pepper, and a pinch of salt.
- Toss the boiled eggs in this mixture and roast for 2 minutes until they turn slightly golden.
- Remove the eggs and keep them aside.
Step 2: Preparing the Masala Base
- Heat 3 tbsp oil in a pan.
- Add cinnamon, cardamom, cloves, and cumin seeds, sautéing until aromatic.
- Add chopped onions and salt, sautéing until golden brown.
- Mix in ginger-garlic paste and sauté until the raw smell disappears.
- Add green chillies, turmeric powder, garam masala, coriander powder, and chilli powder.
- Sprinkle a little water and cook until the masala turns slightly thick.
Step 3: Cooking the Tomato Base
- Add finely chopped tomatoes and mix well.
- Cook until the tomatoes break down and blend into a thick paste.
- Pour in some water, mix well, and let it cook for a few minutes.
Step 4: Finalizing the Curry
- If you prefer a thicker curry, grind coconut into a smooth paste and add it to the curry.
- Let the curry simmer until it thickens.
- Finally, add the roasted eggs and let them absorb the flavors.
- After 2-3 minutes, garnish with fresh coriander leaves.
